In late September, Shintaro Morimoto (SixTONES) dived into the sea off DASH Island and discovered something huge that would change the history of the island. “Wow! What is this! Upon receiving the report, my senior, Masahiro Matsuoka (TOKIO), was impressed and said, “This is the kind of thing that appears in sushi restaurants,” but he also said, “It’s something I’ve been thinking about for a long time.” Coming out with plans. That is…to create the finest gifts using high-quality ingredients from DASH Island. As a first step, Matsuoka came up with the idea of making “salt sea urchin” using giant red sea urchin.
Salted sea urchin, one of Japan’s three major delicacies, has a long shelf life and increased flavor by drawing out the moisture from the sea urchin using the power of salt. Matsuoka immediately headed to Fukui, the home of salted sea urchin, to learn how to make it, and asked a professional with 60 years of experience to teach him. However, the Fukui salt sea urchin used is a smaller and richer sea urchin, which is the exact opposite of the large and watery red sea urchin from DASH Island. Still, Matsuoka, who brought back the traditional techniques he learned in Fukui to the island, says, “It may all be a success, or it may all be a failure.”
Then, I delivered the salted sea urchin I made to Kenichi Endo, my senior colleague, as a token of my gratitude for his continued support! Making DASH’s specialty “salt sea urchin” was a challenge that took a whole summer. Will I receive the approval of my seniors?
